Oven-Barbecued Rabbit
2 wild rabbits (4-6 servings)
Barbecue Sauce:
- 2 medium onions finely chopped
- 2 green peppers, finely chopped
- 1 clove garlic, minced
- 1 cup water
- 1 cup cider vinegar
- 1/2 cup catsup
- 1/2 cup brown sugar
- 1/4 cup butter, cut up
- 2 T. Worcestershire Sauce
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
Heat oven to 300 degrees.
In medium saucepan, combine all barbecue sauce ingredients.
Cook over medium high heat until bubbly, stirring occasionally.
Reduce heat. Simmer 10 minutes.
Arrange rabbit pieces in single layer in 13X9-inch baking pan.
Pour sauce evenly over rabbit pieces.
Bake until tender, 2 1/2-3 hours, turning rabbit pieces occasionally.
